It’s Tomato Soup Season at my house and I’m going to share this hands-down-delicious and REALLY easy tomato soup recipe that I made up a few years ago.
Yes, I made up a recipe.
But did you also notice that I said it was a “REALLY easy” recipe?
It’s not that impressive to make up a REALLY easy one.
Trust me on that.
You start by chopping up an onion.
As I general rule I use half an onion per person.
Since I was making soup for four, I used two onions
Brilliant, I know… that Ivy League education is really paying off.
Saute the chopped onion in two tablespoons of Olive Oil over medium heat…
Let them sizzle for 3-5 minutes.
Then add Diced Tomatoes (one can per serving… four cans!)
Now it’s time for your spices – basil, parsley, salt and pepper.
I use 2 teaspoons each of basil and parsley, then salt and pepper to taste (don’t skimp on the salt unless you have to).
Heat it over medium until you get a slight boil.
Lower the heat to a simmer and toss in a good handful of Parmesan Cheese, about 1/2 cup
Now you can simply use a wand blender and chop it all up right in the pot.
If you don’t have a wand blender, you can use a traditional blender, food processor or even hand-held mixer. Just be careful you don’t burn yourself! The soup is HOT.
And if you’re silly enough to try and use the wand blender while you’re taking a picture, take a big step back so you don’t get soup on your new camera.

Once the soup is a nice chunky consistency, I like to add some creme…. about 1/4 cup
(Of course, you can use milk if you want to, just increase the amount you use so that it cuts the acidity of the tomatoes. But if you have the creme, go for it! It’s delish)
Then give it another good round with the blender.
I like my soup to have a chunkier consistency so I’m not trying to make it too smooth. Just chopped up enough so you’re not chewing it.
That’s it! Ladle it up into a bowl, serve with a crusty grilled cheese sandwich and ENJOY!
NOTE to SELF: next time use a smaller plate when you serve your soup so that the sandwich doesn’t seem so puny! Geesh, my mother-in-law is going to think I’m starving her son. (Hi Mimzie!)

OMG- Greg LOVES LOVES LOVE tomato soup, that is his favorite. He would be so surprised if I made it. And, by the way, thanks for the breakdown of serving sizes. It's just Greg and I – so this makes it easy to make soup for the two of us!

That looks delicious! I've been trying to find a good tomato soup recipe since all the canned ones have corn syrup. I have dairy allergies so I'll have to forgo the cheese and substitute hemp milk for the cream but I think it will still be good! Next WFMW I'm sharing my my split pea soup recipe.
