The next time you want to make a snazzy meal that is super easy, try using compounded butter…
I did this yesterday with some chicken (on sales and marked down!) and it was good.
I mean, really, really GOOD.
Step 1: Go outside and clip some herbs from the cute little pots that Nature Boy Planted.
I chose Parsley, Chive and Rosemary
Step 2: Lay the herbs on the counter and try to take a picture of them.
Try again.
And again.
Settle for the least awful one.
Step 3: Chop up herbs and put them into a mixer with some butter (I use salted butter ’cause I think unsalted butter is gross. I’m sorry to any pastry chefs out there)
Step 4: Mix ‘em up real good
Step 5: Place Chicken Breast in roasting pan and then slather on some of the compounded herb butter, insuring you get some under the skin too.
Step 6: add Salt and Pepper to taste
Step 7: Cook for ~45 minutes at 450 degrees
Step 8: Inhale delicious odors and start salivating for a knock your socks off good dinner.
Step 9: Realize that you forgot to take a picture of the finished product, but vow to do better next time.

That does sound yummy! Too bad we don't grow our own herbs. I think next summer I am going to make sure to start early and plant veggies and herbs. I would love to have even just a few of my own veggies. It would save us some money for sure but I think it would be fun to try it just to say I have done it.
